Gingerbread Blondie Cups

Ingredients
  

  • 1 cup butter, melted
  • 1 cup brown sugar
  • 2 large eggs
  • 2 tablespoons molasses
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger

Instructions
 

  • Preheat the oven to 350 F. Line a 12 cup muffin pan with paper liners. In a large bowl, mix together butter, brown sugar, eggs, molasses, and vanilla extract until smooth. Add in flour, salt, baking powder, cinnamon and ginger and mix until combined.
  • Evenly divide the mixture between the prepared muffin pan. Bake for 12-15 minutes.
