Add in flour, mix until a dough forms. Fold in sprinkles. Roll the cookie dough into bite-sized balls, set onto plates. Refrigerate for 20 minutes.
Place the chocolate chips into a medium microwave-safe bowl, heat in 30-second intervals, stirring after each until fully melted and smooth. Dip each cookie dough ball into the melted chocolate, and set back onto plates. Refrigerate until the chocolate has set.
