Fluffy Blueberry Muffins

Ingredients
  

  • 1/2 cup milk
  • 1 teaspoon white distilled vinegar
  • 2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup butter, melted
  • 2 large eggs
  • 1 1/2 cups fresh blueberries

Method
 

  1. Preheat oven to 375 F. In a small measuring cup, whisk together milk and vinegar. Let sit for 5 minutes.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt. Add in melted butter, milk mixture and eggs. Whisk until just combined, fold in fresh blueberries.
  3. Divide batter evenly between a greased 12-cup muffin pan. Bake for 20-25 minutes.
