Flourless Marshmallow Peanut Butter Cookies

Ingredients
  

  • 1 cup peanut butter
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup mini marshmallows

Instructions
 

  • Preheat the oven to 350 F. In a large bowl, combine peanut butter with both granulated sugar and brown sugar, egg and vanilla extract until smooth.
  • Fold in the mini marshmallows. Use a cookie scoop to place the cookies onto a large ungreased baking sheet at least 2-inches apart. Bake for 10-12 minutes.
