Earth Day Chocolate Chip Snickerdoodle Cookies

Ingredients
  

  • 1/2 cup butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 teaspoon vanilla extract
  • green and blue food coloring
  • 1 cup chocolate chips, divided
  • 1/2 cup granulated sugar
  • 1 teaspoon ground cinnamon

Instructions
 

  • Preheat the oven to 350 F. In a medium bowl, whisk together flour, salt, and baking soda. In a large bowl, mix together butter, brown sugar, and granulated sugar until fluffy. Add in the egg and vanilla extract, and mix until smooth.
  • Add in the flour mixture, mix until it is fully combined. Divide the cookie dough into two bowls. Mix green food coloring into one bowl and blue in the other. Mix 1/2 cup chocolate chips into each cookie dough.
  • In a shallow dish, combine granulated sugar and ground cinnamon. Take a small amount of each cookie dough from each bowl and roll together into balls. Roll each one in the cinnamon sugar mixture. Place the cookies onto a large ungreased baking sheet at least 2-inches apart. Bake for 10-12 minutes.
