Doritos Mac and Cheese Cups

Ingredients
  

  • 8 oz. elbow pasta
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup crushed Doritos chips

Method
 

  1. Preheat the oven to 350 F. Line a 12 cup muffin pan with paper liners. Cook pasta according to package directions, drain.
  2. In a medium saucepan over medium heat, melt butter, add in flour and cook for a minute to brown. Add in milk, salt, pepper, and 1 1/2 cups shredded cheddar cheese. Cook the mixture, while stirring constantly until the cheese has fully melted and the sauce has thickened.
  3. Mix the sauce with the pasta. Evenly divide the mac and cheese between the lined muffin cups. Top each cup with the crushed Doritos. Bake for 12-15 minutes.
