Doritos Mac and Cheese Cups

Ingredients
  

  • 8 oz. elbow pasta
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup crushed Doritos chips

Instructions
 

  • Preheat the oven to 350 F. Line a 12 cup muffin pan with paper liners. Cook pasta according to package directions, drain.
  • In a medium saucepan over medium heat, melt butter, add in flour and cook for a minute to brown. Add in milk, salt, pepper, and 1 1/2 cups shredded cheddar cheese. Cook the mixture, while stirring constantly until the cheese has fully melted and the sauce has thickened.
  • Mix the sauce with the pasta. Evenly divide the mac and cheese between the lined muffin cups. Top each cup with the crushed Doritos. Bake for 12-15 minutes.
