Creamy Monterey Jack Shells and Cheese

Ingredients
  

  • 16 oz. small pasta shells
  • 4 tablespoons butter
  • 4 tablespoons all-purpose flour
  • 2 1/2 cups milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 cup shredded monterey jack cheese
  • 2 cups shredded cheddar cheese

Instructions
 

  • Cook pasta according to package directions. Drain and place into a large bowl. Melt butter in a large saucepan over medium heat.
  • Add in flour, and cook for a minute to brown. Pour in the milk, salt, pepper and both cheese. Continue to cook over medium-low heat, while whisking constantly until the sauce has thickened. Mix the sauce with the pasta.
