Creamy Monterey Jack Mashed Potatoes

Ingredients
  

  • 2 pounds russet potatoes, peeled and cubed
  • 1/2 cup butter
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 cup shredded monterey jack cheese

Instructions
 

  • Place the potatoes into a large saucepan and cover with water. Cook over medium heat until boiling. Let boil until the potatoes are fork tender. Drain and mash the potatoes with the remaining ingredients.
