Creamy Mashed Potatoes

Ingredients
  

  • 5 pounds russet potatoes
  • 8 oz. cream cheese
  • 1/2 cup butter
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper

Method
 

  1. Peel and dice potatoes into 1-inch cubes and place into a large saucepan. Cover with water and bring to a boil over medium heat. Let simmer for 15-20 minutes, until fork tender.
  2. Drain and place potatoes into a large bowl. Add cream cheese, butter, salt and pepper. Beat with a mixer until smooth and creamy.
