Creamy Colby Jack Mashed Potatoes

Ingredients
  

  • 2 pounds russet potatoes, peeled and cubed
  • 1/2 cup butter
  • 1 cup shredded colby jack cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

Method
 

  1. Place potatoes into a large saucepan and cover with water. Bring the potatoes to a boil, and cook over medium heat, until the potatoes are fork tender.
  2. Drain and place into a large bowl. Mash the potatoes with the remaining ingredients until smooth.
