Creamy Colby Jack Mashed Potatoes
Ingredients
- 2 pounds russet potatoes, peeled and cubed
- 1/2 cup butter
- 1 cup shredded colby jack cheese
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
Instructions
- Place potatoes into a large saucepan and cover with water. Bring the potatoes to a boil, and cook over medium heat, until the potatoes are fork tender.
- Drain and place into a large bowl. Mash the potatoes with the remaining ingredients until smooth.
