Cookies and Cream Cupcakes

Ingredients
  

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 2 large eggs
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 cup crushed Oreo cookies

Ingredients for Cookies and Cream Buttercream Frosting

  • 1/2 cup butter, softened
  • 2 1/2-3 cups powdered sugar
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract
  • 2 Oreo cookies, crushed

Instructions
 

  • Preheat oven to 350 F. In a large bowl, whisk together flour, sugar, salt, and baking powder. Add in eggs, milk, vegetable oil, and vanilla extract, whisk until smooth. Fold in Oreo cookies.
  • Evenly divide cupcake batter between 12 lined cupcake tins. Bake for 15-18 minutes. Let cool completely. For the cookies and cream buttercream frosting, beat softened butter with powdered sugar, milk, vanill extract, and crushed oreos, until creamy.
  • Pipe or spread frosting onto cooled cupcakes.
