In a small bowl, combine warm water, granulated sugar and active dry yeast. Let sit for 10 minutes. In a large bowl, combine flour and salt.
Pour in yeast mixture and olive oil, mix until a dough forms. Knead dough on a floured surface until smooth. Place dough into a large greased bowl, turning to coat. Cover and let rise for 1-2 hours.
Preheat oven to 400 F. Cube mozzarella cheese into 20 cubes. Deflate dough and divide it into 20 pieces. Wrap each piece of dough around each piece of cheese. Place onto a large greased baking sheet in a Christmas tree pattern.
In a small bowl, combine melted butter with salt and garlic powder. Brush butter mixture over bread and sprinkle with dried parsley. Bake for 15-20 minutes.
