Christmas Peanut Butter Cookie Bars

  • 1/2 cup butter, softened
  • 1/2 cup peanut butter
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup Christmas sprinkles

Method
 

  1. Preheat the oven to 350 F. In a medium bowl, whisk together flour, salt, and baking soda. In a large bowl, combine butter with peanut butter, granulated sugar, and brown sugar until fluffy.
  2. Add in the egg and vanilla extract, and mix until smooth. Add in the flour mixture, and mix until it is fully combined. Fold in the Christmas sprinkles.
  3. Press the cookie dough evenly into a greased 8-inch square baking dish. Bake for 20-25 minutes.
