  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 1 cup all-purpose flour
  • 2 cups quick oats
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup Christmas sprinkles

Method
 

  1. Preheat the oven to 350 F. Line a 12 cup muffin pan with paper liners. In a medium bowl, whisk together flour, oats, salt, and baking soda.
  2. In a large bowl, combine butter with sugar until fluffy. Add in egg and vanilla extract, and mix until smooth. Add in the flour mixture, mix until it is fully combined.
  3. Fold in the Christmas sprinkles. Evenly divide the cookie dough between the paper liners. Bake for 15-20 minutes.
