Chocolate Ice Cream Cone Cupcakes

Ingredients
  

  • 18 ice cream cones
  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup cocoa powder
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 2 large eggs
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
Ingredients for Buttercream Frosting
  • 1/2 cup butter, softened
  • 2-3 cups powdered sugar
  • 2-4 tablespoons milk
  • 1 teaspoon vanilla extract

Method
 

  1. Preheat oven to 350 F. Place ice cream cones in a baking dish. In a large bowl, whisk together flour, sugar, cocoa powder, salt, baking powder, and baking soda. Add in eggs, milk, oil, and vanilla extract. Whisk until smooth.
  2. Evenly divide the batter between ice cream cones. Bake for 20-25 minutes. Let cool completely.
  3. In a large bowl with a mixer, beat butter with powdered sugar, milk, and vanilla extract until smooth. Pipe frosting onto cupcakes.
