Chocolate Chip Peanut Butter Easter Eggs

Ingredients
  

  • 1/2 cup butter, softened
  • 1 cup peanut butter
  • 2 1/2 cups powdered sugar
  • 1 cup chocolate chips
  • 12 oz. chocolate chips
  • Easter sprinkles

Method
 

  1. In a large bowl, mix together butter and peanut butter until smooth. Add in powdered sugar until fully combined. Fold in the chocolate chips.
  2. Shape the mixture into ovals and place onto a large plate. Freeze for at least 20 minutes. Place chocolate chips into a microwave-safe bowl, and heat in the microwave in 30-second intervals, stirring well until it is fully melted and smooth.
  3. Coat each egg in the chocolate mixture and set onto a plate. Decorate with sprinkles and let sit until it is fully set.
