  • 1 ( 15 oz.) box yellow cake mix
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 teaspoon mint extract
  • green food coloring
  • 1 cup white chocolate chips

Method
 

  1. Preheat the oven to 350 F. Line a 12 cup muffin pan with paper liners. In a large bowl, mix together cake mix, eggs, vegetable oil, and mint extract until smooth. Stir in the green food coloring until green. Fold in the white chocolate chips.
  2. Evenly divide the cookie dough between the paper liners. Bake for 12-15 minutes.
