Cake Mix Mint Chocolate Chip Oreo Cookies

  • 1 ( 15 oz.) box yellow cake mix
  • 2 large eggs
  • 1 teaspoon mint extract
  • 1/2 cup vegetable oil
  • green food coloring
  • 1 cup chocolate chips
  • 1 cup crushed Oreo cookies

Instructions
 

  • Preheat the oven to 350 F. In a large bowl, mix together cake mix, eggs, mint extract, and vegetable oil until smooth. Add in the green food coloring. Fold in the chocolate chips and Oreo cookies.
  • Use a cookie scoop to place the cookies onto a large ungreased baking sheet at least 2-inches apart. Bake for 10-12 minutes.
