Cake Mix Mint Chocolate Chip Oreo Cookie Cups

Ingredients
  

  • 1 ( 15 oz. ) box yellow cake mix
  • 2 large eggs
  • 1/2 teaspoon mint extract
  • 1/2 cup vegetable oil
  • green food coloring
  • 1 cup chocolate chips
  • 1 cup crushed Oreo cookies

Instructions
 

  • Preheat the oven to 350 F. Line a 12 cup muffin pan with paper liners. In a large bowl, mix together cake mix, eggs, mint extract, and vegetable oil until smooth. Add in the food coloring. Fold in the chocolate chips and Oreo cookies.
  • Evenly divide the cookie dough between the paper liners. Bake for 12-15 minutes.
