Breakfast Potato Bowls

Ingredients
  

  • 8 large eggs
  • 1/2 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 2 pounds russet potatoes, cubed
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/2 teaspoon garlic powder
  • 1 teaspoon paprika
  • salsa
  • shredded cheddar cheese

Instructions
 

  • In a large bowl, whisk together eggs, milk, salt, and pepper. Cook eggs in a large skillet, breaking up with a spatula until fully cooked through. Heat olive oil in another large skillet over medium heat.
  • Add the potatoes, salt, pepper, garlic powder, and paprika. Cook the potatoes until they are crispy and fork tender. Place scrambled eggs into a bowl, top with the potatoes, salsa, and cheese.
