Baked Three Cheese Mac and Cheese

Ingredients
  

  • 16 oz. rotini pasta
  • 4 tablespoons butter
  • 4 tablespoons all-purpose flour
  • 2 1/2 cups milk
  • 1/2 cup grated parmesan cheese
  • 2 cups shredded cheddar cheese, divided
  • 2 cups shredded colby jack cheese, divided
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

Method
 

  1. Preheat oven to 350 F. Cook pasta according to package directions, drain and place into a large bowl.
  2. Melt butter in a large saucepan over medium heat. Whisk in flour and let cook for a minute to brown. Pour in milk and add in grated parmesan cheese, 1 cup shredded cheddar cheese and 1 cup shredded colby jack cheese.
  3. Season with salt and pepper. Continue to cook over medium heat, whisking constantly until thickened and smooth. Mix sauce with pasta. Spread pasta out into a large greased baking dish.
  4. Sprinkle with the remaining 1 cup shredded cheddar cheese and 1 cup shredded colby jack cheese. Bake for 25-30 minutes.
