Andes Mint Sugar Cookies

Ingredients
  

  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup chopped Andes mints

Method
 

  1. Preheat the oven to 350 F. In a medium bowl, whisk together flour, salt, and baking soda. In a large bowl, mix together butter and sugar until fluffy. Add in egg and vanilla extract and mix until smooth.
  2. Add in the flour mixture, and mix until it is fully combined. Fold in the Andes mints. Use a cookie scoop to place the cookies onto a large ungreased baking sheet at least 2-inches apart. Bake for 10-12 minutes.
