Preheat the oven to 350 F. Place half of the cookies onto a baking sheet and top with andes mints. Bake for 2-3 minutes.
Remove from the oven, and sandwich with the remaining cookies. Place the chocolate chips into a microwave-safe bowl, and heat in the microwave in 30-second intervals, stirring well until it is fully melted and smooth.
Fully coat each cookie in the chocolate and set onto a plate. Let sit until the chocolate has completely set.
