In a large measuring cup, place warm water. Stir in granulated sugar and active dry yeast. Let sit for 10 minutes.
In a large bowl, combine flour and salt. Stir in yeast mixture and olive oil. Mix until a dough forms.
Knead dough out onto a floured surface until smooth and elastic, adding in more flour as needed. Place dough into a large greased bowl. Cover with either a towel or plastic wrap. Let rise in a warm place for 1-2 hours.
Preheat oven to 375 F. Deflate dough and place it onto a lightly floured surface. Divide dough in half and shape each into a ball. Roll out each dough into a long rectangle.
Roll dough up into a long log and place onto a large greased baking sheet or loaf pans. Slit tops of bread. Cover and let rise for another 30-60 minutes. Bake for 20-25 minutes.
