Broccoli and Cheese Quesadillas

Ingredients
  

  • 1 (12 oz.) bag fresh or frozen broccoli florets
  • 8 large flour tortillas
  • 1 cup shredded cheddar cheese

Instructions
 

  • Cook broccoli according to the package directions, chop into smaller pieces.
  • Place the broccoli onto four of the flour tortillas. Sprinkle each with 1/4 cup of shredded cheese.
  • Place the remaining flour tortillas on top of the broccoli and cheese. Heat a medium skillet over medium-low heat. Grease with non-stick cooking spray. Cook until quesadilla is lightly browned. Flip and cook until the other side is lightly browned and the cheese has melted.
