Crock-Pot Tomato Soup

Ingredients
  

  • 1 ( 28 oz.) can crushed tomatoes
  • 1 ( 14 oz.) can whole tomatoes
  • 1 large onion, diced
  • 4 cups vegetable broth
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 2 cloves garlic, minced

Instructions
 

  • Place all of the ingredients into a large crock-pot. Cover and let cook on low for 6-8 hours, or on high for 3-4 hours.
  • Blend soup using either an immersion blender or blend in batches until smooth.
