Soft and chewy oatmeal brookie cups with a fun Valentine’s day twist. These easy brookie cups combines a chewy chocolate brownie with a soft and chewy oatmeal cookie filled with Valentine’s day themed sprinkles. These easy brookie cups make the perfect Valentine’s day themed dessert this year.

The brownie batter is simple to make because all of the ingredients are whisked together in a large mixing bowl until smooth. If you are short on time, you can also use a box of brownie mix and prepare it according to package directions. For the oatmeal cookie dough, it is made like a classic oatmeal cookie dough, with the addition of Valentine’s day themed sprinkles added to the cookie dough. Divide the brownie batter between prepared lined muffin cups. Top evenly with the cookie dough. Bake until the brookie cups comes out clean with a toothpick.

Ingredients
  

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup cocoa powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 2 large eggs
  • 1/2 cup butter, melted
  • 1 teaspoon vanilla extract
  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 1 cup all-purpose flour
  • 1 1/2 cups quick oats
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup Valentine's day sprinkles

Instructions
 

  • Preheat the oven to 350 F. Line a 12 cup muffin pan with paper liners. In a large bowl, whisk together flour, sugar, cocoa powder, salt, and baking soda.
  • Add in eggs, melted butter, and vanilla extract and mix until smooth. In a medium bowl, whisk together flour, oats, salt, and baking soda. In a large bowl, combine butter with sugar until fluffy.
  • Add in the egg and vanilla extract, and mix until smooth. Add in the flour mixture, and mix until it is fully combined. Fold in the sprinkles. Evenly divide the brownie batter between the lined muffin pan.
  • Top evenly with the cookie dough. Bake for 20-25 minutes.
