Three Cheese Mashed Potato Bake

Creamy and cheesy mashed potatoes baked topped with more cheese. These delicious mashed potatoes are made with three types of cheese. Parmesan, cheddar, and mozzarella cheese are all used to make this creamy and cheesy mashed potato bake. This dish is simple enough for a weeknight side dish, or it would taste great served at Thanksgiving, Christmas, or Easter dinner.

The potatoes are first peeled and cubed. Boil the potatoes in a large pot of water until they are fork tender. Drain the potatoes and mash with butter, parmesan cheese, cheddar cheese, half of the mozzarella cheese, and season with salt and pepper. Mash with either a potato masher or hand mixer until smooth. Spread the potato mixture into a greased baking dish. Top with the remaining cheese, and bake until fully melted.

Ingredients
  

  • 3 pounds russet potatoes, peeled, diced
  • 1/2 cup butter
  • 1/2 cup grated parmesan cheese
  • 1/2 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese, divided
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

Instructions
 

  • Preheat the oven to 350 F. Place potatoes into a large saucepan, and cover with water. Bring to a boil, let cook for about 20 minutes, until the potatoes are fork tender. Drain and place potatoes into a large bowl.
  • Mash the potatoes with butter, parmesan cheese, cheddar cheese, 1/2 cup mozzarella cheese, salt, and pepper. Mash until smooth.
  • Spread the potato mixture into a greased baking dish. Top with the remaining 1/2 cup shredded mozzarella cheese. Bake for 20-25 minutes.
