Tex-Mex Shepherds Pie

Cheesy shepherds pie made with taco meat, and topped with fluffy delicious mashed potatoes. This shepherds pie is made different from your classic shepherds pie with the spicy flavoring in the meat. Corn and black beans are also added to the pie. This spicy tex-mexshepherds pie makes a great easy meal served with a side of your favorite vegetables or a side salad.

The taco meat is made just as you would prepare tacos, except that corn and black beans are added to the mixture. Place the mixture into a greased baking dish and top with shredded cheddar cheese. You can also use Mexican blend cheese instead. For the mashed potatoes, you can make them yourself, or you can use a premade or leftover potatoes to save on time. Spread the mashed potatoes over the cheese and bake until the top is lightly golden browned.

Ingredients
  

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1/2 cup water
  • 1 ( 15 oz.) can corn, drained
  • 1 ( 15 oz. can) black beans, drained
  • 2 cups shredded cheddar cheese
  • 2 pounds russet potatoes, peeled, cubed
  • 1/2 cup butter
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

Instructions
 

  • Preheat oven to 350 F. Brown ground beef in a large skillet over medium heat, breaking it up with a spatula as it cooks. Drain grease. Stir in taco seasoning, water, corn, and black beans. Let cook for another 5 minutes.
  • Spread meat mixture into a greased baking dish. Top with cheese. Place potatoes in a large saucepan and cover with water. Bring to a boil over medium heat. Cook until potatoes are fork tender. Drain and place into a large bowl. Mash potaotes with butter, salt, and pepper.
  • Spread potatoes over cheese. Bake for 25-30 minutes.
