Spicy oven roasted pork roast that only needs 20 minutes in the oven. Pork tenderloin is an easy budget friendly cut of meat that is so versatile with how you can season it. For this pork tenderloin roast, I seasoned it with taco seasoning to create a spicy tex-mex flavor that is perfect for this roast. This is a great meal to be served on a weekday because from start to finish, you can have it ready on the table in 45 minutes. Since the pork tenderloin is naturally gluten-free, this makes the perfect meal for a gluten-free diet served with roasted potatoes and your favorite vegetables.

Before the pork tenderloin gets roasted in the oven, it is first to seared on the stove-top. Searing the pork first, brings more flavor out in the pork and it will also help ensure that the pork will cook evenly. Heat a tablespoon of the olive oil in a large skillet over medium heat. Rub the remaining olive oil evenly over the pork tenderloin and season both sides of it with the taco seasoning. Cook the pork in the skillet for about 2 minutes on each side, just to lightly brown it but not to cook it completely. Then place the pork tenderloin in a baking dish and finish cooking it in the oven until the pork in longer pink and the center of it is at least 180 F.

Ingredients
  

  • 1 pound pork tenderloin
  • 2 tablespoons olive oil, divided
  • 2 tablespoons taco seasoning

Instructions
 

  • Preheat oven to 400 F. Evenly rub 1 tablespoon of the olive oil over the pork tenderloin.
  • Sprinkle the taco seasoning over both sides of the pork. Heat the remaining tablespoon of olive oil in a large skillet over medium heat. Place the pork into the skillet and brown sides for about one minute on each side.
  • Place the pork tenderloin into a baking dish. Bake for 20-25 minutes, until the pork reaches at least 180 F.
