Easy soft and chewy cookies using no sugar at all to make them. These easy sugar-free snickerdoodle cookies have all of the same traditional flavors of a classic snickerdoodle cookie, but without the sugar. Stevia sweetener is used in place of granulated sugar in these cookies. They still have the same sweet taste and chewy texture that you will find in traditional cookies.
The dough for these cookies are made sugar free by mixing the butter with granulated stevia instead of granulated sugar. They are then prepared in the same way as traditional cookies. For the cinnamon sugar mixture, instead of sugar, more of the granulated stevia sweetener is mixed with ground cinnamon. The cookie dough is rolled into balls, then rolled into the cinnamon mixture. Place them onto a large ungreased baking sheet and bake until the center comes out clean with a toothpick.
Sugar-Free Snickerdoodle Cookies
Ingredients
- 1/2 cup butter, softened
- 1 cup granulated stevia sweetener
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1/2 teaspoon cream of tartar
- 1 teaspoon ground cinnamon
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup granulated stevia sweetener
- 2 teaspoons ground cinnamon
Instructions
- Preheat the oven to 350 F. In a medium bowl, whisk together flour, salt, baking soda, cream of tartar and cinnamon.
- In a large bowl, combine butter with stevia until fluffy. Add in egg and vanilla extract, and mix until smooth. Add in the flour mixture, mix until it is fully combined.
- In a shallow dish, combine granulated stevia and cinnamon. Roll the cookie dough into balls, and roll them into the cinnamon mixture. Place cookies onto a large ungreased baking sheet at least 2-inches apart. Bake for 10-12 minutes.
