St. Patrick’s Day Shortbread Cookies

Easy buttery classic shortbread cookies filled with green St. Patrick’s day themed sprinkles. They have all of the classic buttery and crumbly shortbread taste that everyone loves. These easy shortbread cookies make the perfect easy dessert to bake this St. Patrick’s day.

The cookie dough is made like a classic shortbread cookie dough, then some green or St. Patrick’s day themed sprinkles are folded into the cookie dough. Roll the dough into balls, and flatten each one slightly. Place the cookies onto a large ungreased baking sheet. Bake until the bottoms of the cookies are lightly browned.

Ingredients
  

  • 1/2 cup butter, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/4 cup green sprinkles

Instructions
 

  • Preheat the oven to 350 F. In a large bowl, combine butter with powdered sugar until fluffy. Add in vanilla extract, and mix until smooth. Add in flour, and mix until it is fully combined.
  • Fold in the sprinkles. Roll the cookie dough into balls, and flatten slightly. Place the cookies onto a large ungreased baking sheet at least 2-inches apart. Bake for 10-12 minutes.
