St. Patrick's Day Peanut Butter Sprinkle Cookies
Ingredients
- 1/2 cup butter, softened
- 1/2 cup peanut butter
- 1 cup granulated sugar
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup green sanding sugar
Instructions
- Preheat the oven to 350 F. In a medium bowl, whisk together flour, salt, and baking soda. In a large bowl, combine butter with peanut butter and sugar until fluffy. Add in egg and vanilla extract until smooth.
- Add in the flour mixture, and mix until it is fully combined. Place the sanding sugar into a shallow dish. Roll the cookie dough into balls, and roll each one into the sanding sugar.
- Place the cookies onto a large ungreased baking sheet at least 2-inches apart. Bake for 10-12 minutes.
