St. Patrick’s Day M&M Blondies

Soft and fluffy homemade blondies filled with tons of mint flavor from mint extract, and mint M&Ms folded into the batter. These easy blondies make the perfect easy dessert to bake for St. Patrick’s day this year. Everyone will love the fluffy texture, and mint chocolate flavor.

The batter is easy to make, the sugar is first mixed with melted butter eggs, and mint extract. Then the other ingredients are whisked into the mixture. Pour the batter into a greased square baking dish, and bake until the center of the blondies comes out clean with a toothpick. Let cool completely before cutting into bars and serving.

St. Patrick's Day M&M Blondies

Ingredients
  

  • 1 cup butter, melted
  • 1 cup brown sugar
  • 2 large eggs
  • 1 teaspoon mint extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1 cup mint M&Ms

Instructions
 

  • Preheat the oven to 350 F. In a large bowl, whisk together melted butter, brown sugar, eggs, and mint extract until smooth. Add in flour, salt, and baking powder, and mix until smooth.
  • Fold in the M&Ms. Evenly pour the batter into a greased 8-inch square baking dish. Bake for 20-25 minutes.
