These easy soft and chewy cookie bars are made with cream cheese mixed into the cookie dough. The cream cheese makes these cookie bars more fluffy. These bars are filled with mint flavors and colored green with food coloring, making them the perfect easy treat to bake this St. Patrick’s day.
The cookie dough is made by mixing cream cheese with butter and sugar. Mint extract is also used instead of vanilla extract. Green food coloring is mixed into the dough until it is fully green. Spread the cookie dough into a greased square baking dish. Bake until the center of the cookie bars comes out clean with a toothpick. Let cool completely before cutting into bars and serving.

- 1/2 cup butter, softened
- 4 oz. cream cheese, softened
- 1 cup granulated sugar
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking powder
- 1 large egg
- 1 teaspoon mint extract
- green food coloring
Instructions
- Preheat the oven to 350 F. In a medium bowl, whisk together flour, salt, and baking powder. In a large bowl, combine butter with cream cheese and sugar until fluffy. Add in egg and mint extract until smooth.
- Add in the flour mixture, mix until it is fully combined. Add in the green food coloring, and mix until it is fully green. Evenly spread the cookie dough into a greased 8-inch square baking dish. Bake for 20-25 minutes.
