Easy cheesy quiche filled with spinach over a pie crust. This quiche is great for brunches or breakfast. Quiches are great to make for brunch or lazy weekend breakfast, because it takes a little more time to bake. But it is so quick and easy to prepare, especially if you are using a premade pie crust. Serve with bacon or sausage and your favorite brunch foods for a delicious breakfast.
I used a premade pie crust for this, but you can also make your own pie crust if you prefer. The pie crust will need to be prebaked in the oven for a couple of minutes to ensure that it cooks through. The egg and spinach mixture is made by first preparing the frozen spinach according to the package directions. Whisk the eggs, milk, cooked spinach, shredded cheddar cheese, salt and pepper together in a large bowl. Pour the egg mixture into the baked pie crust and bake until the egg mixture has set and the pie crust is golden browned.
