Oven-roasted vegetables are my favorite side dish, but I wanted to change the seasonings up a bit for a more spicy side dish. For the vegetables, I decided to choose to use fresh asparagus. The asparagus is coated in a spicy spice mixture with paprika and red pepper flakes. And then it is oven-roasted until it is crispy and browned. This spicy side dish can go with any type of main dish. You can even use the asparagus in tacos along with broccoli and bell peppers to create a spicy vegetarian taco. Any way you serve it, this asparagus will make your meal more flavorful.
The fresh asparagus needs the ends of it trimmed before cooking. Mix the asparagus with olive oil, salt, pepper, paprika, red pepper flakes and ground cumin in a large bowl. If you would rather the asparagus to not be so spicy, you can reduce the amount of paprika and red pepper flakes in it. Spread the vegetables out onto a baking dish in a single layer and roast in the oven until lightly browned and crispy.
Spicy Roasted Asparagus
Ingredients
- 2 pounds fresh asparagus
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1/2 teaspoon paprika
- 1/2 teaspoon red pepper flakes
- 1/2 teaspoon ground cumin
Instructions
- Preheat oven to 400 F. Cut ends off of asparagus. Mix asparagus with olive oil , salt, pepper, paprika, red pepper flakes and ground cumin.
- Spread asparagus onto a baking sheet. Bake for 20-25 minutes.
