Fresh green beans cooked with crispy bacon in garlic and chicken broth gives this side dish a southern taste. Green beans are one of my favorite vegetables, they are quick and easy to prepare and can be cooked a variety of ways. For these green beans they are simmered in chicken broth with bacon, diced onion and minced garlic. it is cooked low and slow on the stove-top, so it is not the quickest side dish to make. Which is why I like to make this side dish for Sunday dinners.

Chop uncooked bacon into bite-sized pieces and fry them in a large saucepan over medium heat. Until they are fully cooked through and crispy. There is no need to drain the bacon grease, it cooks with the remaining ingredients giving the green beans even more of a southern feel. Add the diced onion and minced garlic to the bacon and cook for a couple of minutes, until softened. Add in chicken broth and seasonings and let the mixture simmer for one hour. This comfort food side dish goes great with any country style main dish.

Ingredients
  

  • 1 pound fresh green beans
  • 4 slices bacon, chopped
  • 1 large red onion, diced
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/2 teaspoon garlic powder

Instructions
 

  • Trim green beans. In a large saucepan over medium heat, cook chopped bacon until crispy. Add onion and minced garlic and cook until softened.
  • Add green beans, chicken broth, salt, pepper and garlic powder. Let simmer for 1 hour.
