A fun Christmas themed cake shaped like a snowman and decorated with mini chocolate chips and M&Ms. This Christmas cake is a classic fluffy and delicious vanilla cake. Covered with a creamy vanilla buttercream frosting. This cake is fun to decorate with the whole family for a fun Christmas dessert.

The fluffy vanilla cake is simple to make, no mixer is required, just a large bowl and cake pans. Flour, sugar, salt, baking powder and baking soda are whisked together. Eggs, milk, vegetable oil and vanilla extract are added to the mixture and whisked until a smooth batter forms. Divide the cake batter between a round 9-inch, round 8-inch and square 7-inch cake pan that has been lined and greased with non-stick cooking spray. Bake until the cakes come out clean with a toothpick. Let them cool completely before frosting.

To make the vanilla buttercream frosting, softened butter is beat with powdered sugar, milk and vanilla extract until smooth. Place a small portion of the frosting into a small bowl and mix with the cocoa powder, to use for the top hat portion of the cake. To assemble the cake, place the larger cake at the bottom followed by the smaller cake layer. To make the top hat, cut the square cake into a long strip and a rectangle. Place the strip of cake above the small cake layer followed by the rectangle cake piece. Frost both the round cake layers with the vanilla buttercream frosting. And use the chocolate to frost the top hat. Decorate with m&ms and chocolate chips. Place two pretzel sticks on the side of the larger cake for the arms.

  • 3 cups all-purpose flour
  • 2 cups granulated sugar
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 4 large eggs
  • 2 cups milk
  • 1 cup vegetable oil
  • 1 teaspoon vanilla extract

Ingredients for Vanilla Buttercream Frosting

  • 1 cup butter, softened
  • 4-5 cups powdered sugar
  • 4 tablespoons milk
  • 1 teaspoon vanilla extract
  • 1 tablespoon cocoa powder
  • M&Ms
  • mini chocolate chips
  • pretzel sticks

Instructions
 

  • Preheat oven to 350 F. Line and grease a 9-inch round cake pan, 8-inch round cake pan and a 7-inch square cake pan with parchment paper. In a large bowl, whisk together flour, sugar, salt, baking powder and baking soda.
  • Add in eggs, milk, vegetable oil and vanilla extract and whisk until smooth. Divide the cake batter between the three cake pans. Bake for 30 minutes, let cool completely.
  • For the buttercream frosting, beat softened butter with powdered sugar, milk and vanilla extract until smooth. Divide a small portion of the frosting into a small bowl, mix with the cocoa powder until smooth.
  • To assemble the cake, cut the square cake into one long strip and a rectangle for the hat. Place the rectangle over the strip. Place the smaller cake layer under the hat followed by the large cake under. Frost the round cake layers with the vanilla frosting, and the top hat with the chocolate frosting. Decorate cake with m&ms for the eyes and scarf, the mini chocolate chips for the mouth and the pretzel sticks for the arms.
