Smashed Potatoes

Delicious and buttery smashed red potatoes make the perfect side dish that goes great with just about any meal. The red potatoes are boiled and smashed with butter and garlic. They are then baked until crispy. You don’t need a lot of ingredients to make this dish. Just some potatoes, butter, garlic and some seasonings. Make this quick and easy side dish to go alongside any dinner.

For the potatoes, I used red potatoes, but you could also use any other small-sized potatoes for this instead. The potatoes are boiled until fork tender. Drain and mix the potatoes with melted butter, minced garlic, and seasonings. Place each potato onto a greased baking sheet. Smash lightly with a potato masher. Bake until the potatoes are crispy.

Ingredients
  

  • 1 pound red potatoes
  • 1/4 cup melted butter
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried parsley

Instructions
 

  • Preheat oven to 400 F. Place potatoes into a large saucepan over medium heat, cover with water. Let simmer until fork tender. Drain.
  • Mix potatoes with melted butter, minced garlic, and seasonings. Place potatoes onto a greased baking sheet. Press potatoes down with a potato masher. Bake for 20-25 minutes.
