Rolo Stuffed Peanut Butter Cookies

Soft and chewy peanut butter cookies stuffed with a chocolate and caramel rolo. These chewy cookies are delicious with the peanut butter flavor combined with chocolate and caramel. These cookies make a great addition to a Christmas cookie exchange or just as a fun baking treat to enjoy with your family.

The cookie dough for these cookies is made just like a classic peanut butter cookie. The cookie dough will need to be chilled in the fridge for one hour before baking so that the cookies do not spread in the oven. You can also use a premade peanut butter cookie dough to save on time. Roll cookie dough around each rolo and roll into a ball. Place onto ungreased baking sheets and bake for 10-12 minutes.

Ingredients
  

  • 1/2 cup butter, softened
  • 3/4 cup peanut butter
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda

Instructions
 

  • In a medium bowl, whisk together flour, salt, and baking soda. In a large bowl with a mixer, beat softened butter with peanut butter and both sugars.
  • Add in egg and vanilla extract, beat until smooth. Add the flour mixture in three additions, beating after each until fully incorporated. Cover and refrigerate for at least one hour.
  • Preheat oven to 350 F. Divide cookie dough into pieces, flatten slightly, place one rolo on each dough and roll into a ball. Place cookies at least 2-inches apart onto ungreased baking sheets. Bake for 10-12 minutes.
