Rolo Brownie Cups

Easy chocolate brownie cups with each cup stuffed with a chocolate Rolo. These easy brownie cups make the perfect easy treat to bake for any occasion. Everyone will love the soft and fluffy brownie cups with a chocolate Rolo baked instead of each cup.

The brownie batter is made by whisking all of the ingredients together. Divide half of the batter between a paper lined muffin pan. Place one Rolo in each cup, and cover with the remaining brownie batter. Bake until each brownie cup comes out clean with a toothpick.

Rolo Brownie Cups

Ingredients
  

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup cocoa powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 2 large eggs
  • 1/2 cup butter, melted
  • 1 teaspoon vanilla extract
  • Rolos

Instructions
 

  • Preheat the oven to 350 F. Line a 12 cup muffin pan with paper liners. In a large bowl, whisk together flour, sugar, cocoa powder, salt, and baking soda. Add in the eggs, melted butter, and vanilla extract until smooth.
  • Evenly divide half of the brownie batter between the paper liners. Place one Rolo on each brownie cup. Cover with the remaining brownie batter. Bake for 15-20 minutes.
