Oreo Stuffed Gingerbread Cookies

Soft and chewy gingerbread cookies stuffed with an Oreo cookie. These cookies have all of the classic flavors of gingerbread made into a soft and chewy cookie, and filled with a chocolate Oreo cookie. The Oreo cookie is baked inside of the gingerbread cookie dough. It makes a fun twist on a classic Christmas dessert that everyone will love.

The dough for these cookies is made like a classic soft gingerbread cookie dough. A Oreo cookie is filled inside of each piece of cookie dough. Place the cookies onto a large ungreased baking sheet at least 2-inches apart, and bake until they are fully cooked through. Let cool on a cooling rack completely before serving.

Oreo Stuffed Gingerbread Cookies

Ingredients
  

  • 1/2 cup butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/4 cup molasses
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Oreo cookies

Instructions
 

  • Preheat the oven to 350 F. In a medium bowl, whisk together flour, salt, baking soda, cinnamon, ginger, and cloves. In another large bowl, combine butter with both sugars and molasses until fluffy.
  • Add in the egg and vanilla extract, and mix until smooth. Add in the flour mixture, mix until it is fully combined. Roll the cookie dough into balls, and flatten each slightly.
  • Place one Oreo cookie onto each piece of dough and roll it into a ball. Place the cookies onto a large ungreased baking sheet at least 2-inches apart. Bake for 10-12 minutes.
