Reese’s Peanut Butter Cup Stuffed Peanut Butter Pudding Cookies

Soft and chewy peanut butter cookies with a box of vanilla pudding mix mixed into the cookie dough. Each cookie is also stuffed with a mini Reese’s peanut butter. Everyone will love the soft and chewy texture of the cookies and delicious chocolate peanut butter surprise in each cookie.

The cookie dough is made similar to a classic peanut butter cookie dough, except with the addition of vanilla pudding mix whisked into the flour mixture. Roll the cookie dough into balls, and place one mini Reese’s peanut butter on each piece of cookie dough. Roll the dough into balls, covering the chocolate completely. Place the cookies onto a large ungreased baking sheet at least 2-inches apart. Bake until the cookies are fully cooked through.

Ingredients
  

  • 1/2 cup butter, softened
  • 1/2 cup peanut butter
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 1/2 cups all-purpose flour
  • 1 ( 3 oz.) box vanilla pudding mix
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 teaspoon vanilla extract
  • mini Reese's peanut butter cups

Instructions
 

  • Preheat the oven to 350 F. In a medium bowl, whisk together flour, pudding mix, salt, and baking soda. In a large bowl, combine butter with peanut butter, granulated sugar, and brown sugar until fluffy.
  • Add in the egg and vanilla extract, and mix until smooth. Add in the flour mixture, mix until it is fully combined. Roll the cookie dough into balls, and flatten slightly.
  • Place one mini peanut butter cup on each piece of cookie dough. Roll into a balls, and place onto a large ungreased baking sheet at least 2-inches apart. Bake for 10-12 minutes.
