Quick and easy brownie cookies for Valentine’s day. These red velvet brownie cookies are so easy to make and they are delicious. They are made with a homemade red velvet flavored brownie batter, and baked just like cookies. They have a more soft and cake like texture than regular cookies. Everyone will love these fun brownie cookie for Valentine’s day.

The brownie batter is quick and easy to make, all of the ingredients are whisked together in a large mixing bowl until smooth. Red food coloring is added to the batter to make it red velvet. Use a cookie scoop to place the batter onto a large ungreased baking sheet at least 2-inches apart. Bake until the cookies are fully cooked through. Let them cool completely on a cooling rack before serving.

Ingredients
  

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/4 cup cocoa powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 2 large eggs
  • 1/2 cup butter, melted
  • 1 teaspoon vanilla extract
  • red food coloring

Instructions
 

  • Preheat the oven to 350 F. In a large bowl, whisk together flour, sugar, cocoa powder, salt, and baking soda. Add in eggs, melted butter, and vanilla extract and mix until smooth.
  • Add in the red food coloring and mix until it is fully red. Use a cookie scoop to place the brownie batter onto a large ungreased baking sheet. Bake for 10-12 minutes.
