Baby carrots dipped into ranch dressing is my favorite way to eat carrots. So why not make a crispy ranch flavored carrots for an easy side dish. Only three ingredients and one dish are needed to make these carrots, making this an easy budget friendly side dish. These carrots go well with just about any main dish, I like to serve them with chicken and a side of pasta.
I used baby carrots for this, although you can use fresh unpeeled carrots instead. If you use unpeeled carrots though you need to peel them and slice them into 1-inch peices. You may need to adjust the cooking time because unpeeled carrots are thicker than baby carrots. Baby carrots are mixed with olive oil and a packet and ranch seasoning mix. I mixed all of the ingredients together in the same baking dish that the carrots are baked in. This means less dishes to do. Roast the carrots in the oven for 25-30 minutes, or until they are fork tender.
Ranch Roasted Carrots
Ingredients
- 1 pound baby carrots
- 2 tablespoons olive oil
- 1 ( 5 oz.) packet ranch seasoning mix
Instructions
- Preheat oven to 400 F. In a baking dish, mix carrots with olive oil and ranch seasoning mix until carrots are fully coated.
- Bake for 25-30 minutes.
