Potato salad is a classic summer side dish that goes perfectly with just about any meal. But instead of your traditional potato salad with mayonnaise, ranch dressing is used alongside mayo to create a delicious potato salad for the summer. The potato salad is seasoned with paprika and dried parsley because the parsley pairs perfectly with the ranch dressing. This salad is creamy and delicious, perfect to go along with grilled burgers and hot dogs or any other summer meal.
The potatoes will first need to be boiled until they are fork tender. Drain the potatoes and rinse with cold water to stop the cooking process. Mix the ranch with mayonnaise, mustard and seasonings together in a small bowl. Mix the potatoes with boiled eggs, celery, onion, and the ranch mixture until evenly combined. Store in the fridge until you are ready to serve.
Ranch Potato Salad
Ingredients
- 2 pounds russet potatoes, peeled and cubed
- 2 large hard boiled eggs, chopped
- 1/2 cup diced celery
- 1/2 cup diced onion
- 1 cup ranch dressing
- 1/2 cup mayonnaise
- 1 teaspoon mustard
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- 2 teaspoons dried parsley
Instructions
- Place potatoes into a large saucpan over medium heat. Cover with water. Bring to a boil, simmer until fork tender. Drain and place into a large bowl.
- In a medium bowl, combine mayonnaise, ranch dressing, mustard, salt, pepper, garlic powder, paprika, and dried parsley.
- Mix potatoes with eggs, onion, celery, and mayonnaise mixture. Cover and refrigerate until serving.
