Soft and chewy pumpkin cookie bars made with a box of vanilla pudding mix, and filled with chocolate chips. The pudding mix gives the cookie bars a more soft and chewy texture. These easy chewy cookie bars make the perfect easy treat this fall. Everyone will love the delicious pumpkin and chocolate flavors.

The cookie dough is made similar to a classic pumpkin cookie dough, except with the addition of vanilla pudding mix whisked into the flour mixture, and chocolate chips folded into the cookie dough. Evenly press the cookie dough into a greased square baking dish. Bake until the center of the cookie bars comes out clean with a toothpick. Let cool completely before cutting into bars and serving.

Pumpkin Pudding Chocolate Chip Cookie Bars

Ingredients
  

  • 1/2 cup butter, softened
  • 1/2 cup pumpkin puree
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 1/2 cups all-purpose flour
  • 1 ( 3 oz.) box vanilla pudding mix
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 teaspoon pumpkin pie spice
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips

Instructions
 

  • Preheat the oven to 350 F. In a medium bowl, whisk together flour, pudding mix, salt, baking soda, and pumpkin pie spice. In a large bowl, combine butter with pumpkin puree and both sugars until fluffy.
  • Add in the egg and vanilla extract, and mix until smooth. Add in the flour mixture, mix until it is fully combined. Fold in the chocolate chips. Evenly press the cookie dough into a greased 8-inch square baking dish. Bake for 20-25 minutes.
