Soft and chewy chocolate chips cookies with pumpkin flavor all though out. These pumpkin chocolate chip cookies will make you think of fall. With the weather getting colder, the pumpkin season has started. And what better way to start of fall with these delicious cookies. They are a delicious mix between a classic chocolate chip cookie with the soft and warm pumpkin flavors. Bake these cookies for a delicious fall treat that the whole family will love.

The cookie dough is made by creaming butter and pumpkin puree together along with granulated and brown sugar. The eggs and vanilla extract are also beat into the cookie dough until smooth. The dry ingredients are added to the mixture in three additions, beating until all of the ingredients are combined. Fold the chocolate chips into the cookie dough. Cover and refrigerate the cookie dough for at least one hour. Refrigerating the cookie dough before baking will help keep the cookies from spreading out too much when baking. Place cookie dough onto ungreased baking sheets 2-inches apart and bake for 10-12 minutes.

Pumpkin Chocolate Chip Cookies

Ingredients
  

  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 cup butter, softened
  • 1 cup pumpkin puree
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 ( 12 oz.) bag chocolate chips

Instructions
 

  • In a medium bowl, whisk together flour, salt and baking soda. In a large bowl using either a hand or stand mixer, beat softened butter with pumpkin puree and both sugars. Beat until light and fluffy.
  • Add in eggs and vanilla extract, beat until smooth. Add flour mixture into the wet ingredients in three separate additions, beating after each until fully incorporated. Fold in chocolate chips.
  • Cover and refrigerate cookie dough for at least one hour. Preheat oven to 350 F. Place cookie dough onto ungreased baking sheets 2-inches apart using a cookie scoop. Bake for 10-12 minutes.
