Potato Chip Cookies

These cookies are sweet and salty. They are the perfect combination of a classic sugar cookie mixed with salty potato chips. They are soft and chewy with a slightly crunchy and salty taste to them from the crushed potato chips. These salty cookies are perfect for serving at any occasion, or they would make the perfect game day party dessert.

The dough for these cookies is made like a classic sugar cookie dough. The only difference is that it is mixed with crushed potato chips. Using a cookie scoop, drop the cookies onto a cookie sheet at least 2-inches apart and bake until they are done in the center. Let the cookies cool completely on a cooling rack before serving.

Ingredients
  

  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup crushed potato chips

Instructions
 

  • Preheat the oven to 350 F. In a medium bowl, whisk together flour, salt, and baking soda. In a large bowl, combine softened butter with sugar until fluffy.
  • Add in egg and vanilla extract and mix until smooth. Add in the flour mixture, and mix until a thick dough forms. Fold in crushed potato chips.
  • Using a cookie scoop or spoon, place cookies at least 2-inches apart onto ungreased baking sheets. Bake for 10-12 minutes.
